This IgE‐mediated food allergy is the consequence of initial sensitization to the major birch pollen allergen, Bet v 1, and subsequent immunological cross‐reactivity of Bet v 1‐specific IgE antibodies and T lymphocytes with structurally related proteins in diverse foods, most often apple, peach, and hazelnuts 2. This evidence concerns the gene IGHE and food allergy.
