Along with improvements in the frequency and severity of symptoms related to IBS, a significant decrease in the circulating levels of pro-inflammatory cytokines (IL-6, IL-17, IFN-γ, monocyte chemotactic protein-1 and vascular endothelial growth factor), following a replacement diet with ancient wheat products, was observed, thereby verifying our working premise, formulated after noting significant improvements in the inflammatory profile of a healthy population(5).
