EPHX1 and adenoma: Cortessis et al.[46] reported increased risk of adenomas in individuals who ate their meat well done and had a high predicted EPHX1 activity (combination with 3 or 4 of the more stable alleles, defined as the Y (tyrosine) variant at exon 3 and the R (arginine) variant at exon 4), whereas Ulrich et al.[51] reported elevated adenoma risks associated with low predicted activity in those with high intake of cooked meat.
